Born and raised in Paris, Chef Yann Couvreur is best known for his clever, modern take on the classic French pastries. His signature vanilla mille feuille won international accolades including "Dessert of the year" by the Lebey guide in 2014. After opening his first boutique in Paris back in 2016, he has since made an international expansion with establishments in Miami, Florida (USA), Dubai and Seoul. He first came to Seoul in September 2021, and now boasts 10 boutiques in the city including locations at major department stores (Hyundai, Lotte and Galleria department) and metropolitan areas.
This visit to Yann Couvreur Pâtisserie at Sinsa Square completely came out of left field. I was just following my little nugget around Garosu-gil after we got our Pistachio Butter donut at Old Ferry Donut. There we accidentally came across the (relatively) new Sinsa Square bringing back a rush of memories from my research work. It was then that I recalled it as the address of the new Soigné 2.0 and Yann Couvreur Pâtisserie.
This branch of Yann Couvreur Pâtisserie is hidden inside the bookstore (partnership with Cafe Comma). It has both sweet and savory offerings, from some of Chef Couvreur's signature sweet pastries to his savory creations with onion and sausage.
I love the interior design with wooden panels, floor and furniture creating a warm and inviting feeling.
At 7pm, there aren't many pastries left for me to choose from. In fact, it was a toss-up between two pastries. And I gladly took the one with the most nutty flavors.
Isatis Tart – The vanilla and almond shortcrust with a touch of sea salt provided a nice, savory-sweet taste to the mix and the decoration with vanilla powder and roasted pecan was a clever play on textures and flavors.
In the middle of the action were almond cream, vanilla whipped ganache, pecan praline and vanilla caramel, each with a slightly different texture and degree of richness. A very well-designed dessert with an explosion of elegant and exciting flavors.
Hats off to this guy for keeping his silence throughout daddy's indulgence (though it lasted only 5 minutes! 😆😆😆).
Touted as a genius in combining textures and flavors, Chef Courveur's talent was at full display with the savory-sweet Isatis Tart. Too much I had to rush through this experience (and enjoyment) as time was running out on our stay in Sinsa. I guess I'll miss out on the chance to check out some of my old favorites including Deux Amis and Le Sight Expresso and Croissanteria.
