Our next destination in Seongsu was supposed to be Dior's concept shop but once I decided to take a closer look at Balance Pâtisserie (발렁스), there was no turning back.
Ticked away in a side street, Balance Pâtisserie is a small French patisserie just a few steps off Yeonmujang-gil, one of the main roads in Seongsu-dong. When I said small, I mean miniature. Just a long sofa to accommodate around four guests dining in at the same time; that's all.
Speaking of small, Balance only offers an exclusive selection of exquisite French pastries (5 choices today). But I always think that quantity doesn't really matter as long as the quality is there.

The pistachio tart consists of a pâte sablée sweet shortcrust filled with silky smooth pistachio ganache, topped elegantly with orange pistachio chantilly cream and caramelized pistachio. Very deep pistachio flavors complemented nicely with a pleasant citrus taste.
Tumon (9,400 won) – I thought this was even better. The "creme brulee" top was perfectly matched with a layer of creamy vanilla mousse in the middle and a base of chocolate, black tea and caramelized nuts on the bottom. The combination of sweet and savory (mostly sweet) along with the crunch from the caramelized nuts linked up well to deliver a wonderful experience for the palate.
The first hidden gem we managed to unearth on this trip to Seoul! What really impressed me about Balance Pâtisserie (발렁스) apart from the combination of ingredients and flavors, was the attention to details and that is so important in the art of pastry making.
