85°C Bakery Cafe Link City Shopping Street 連城新天地商業街店 (Shenzhen, CHINA) ★★★☆☆

In recent months, a bakery item by the name of butter rice cake (黃油年糕) has taken China by storm. During my visits to Shenzhen, I noticed that every bakery is putting its own spin on this delightful treat.

The butter rice cake is believed to have originated from a bakery studio in Jiangsu, where chefs reimagined the traditional French pastry canelé by replacing part of the flour with glutinous rice flour and added a generous amount of butter, resulting in a crispy exterior and a chewy, mochi-like centre. Now, it seems like everyone in town is making their own version.

I've already tried several versions of the butter rice cakes this month but today, while window shopping at Link City Shopping Street (連城新天地商業街), I came across a refined version at 85°C Bakery Cafe. This one was filled with frozen custard in the middle and we could actually store it in the fridge.

Butter rice cake with frozen custard (冰心黃油年糕) – This looks similar to those from other bakeries but the the flavor and texture profile is unique. 

It tasted very differently thanks to the frozen custard in the middle which meshed so well with the slightly-chewy shell and mochi-like centre. Jelloman's loving it!
