It’s been two weeks since I last checked in with mom. Our last meal together dated back about 3 weeks ago when we had the early birthday celebration with her at Cafe Too (Time really flies). Since I am taking this afternoon off from work, I thought I should ping her to see if she’s interested in a quick lunch together just before I take off for Shenzhen with Jelloman and little nugget. As usual, she was OK meeting her favorite son. 😌
Well, a quick lunch has turned into a make-up birthday celebration and the next thing I knew, we were meeting up at Caprice, one of mom’s favorite restaurants in town (she doesn’t know many).
It was nice to see Chef Guillaume Galliot on hand directing traffic in the open kitchen.
It’s been a few months since I last visited Caprice and looks like they have tinkered with their food menu a little bit. On top of their 4-course, 5-course and tasting menu, they now have a refined Power Lunch menu available. At $1,288, it appears to be a fairly attractive deal with premium ingredients like white asparagus from Loire Valley, blue lobster from Brittany and Saga beef tenderloin in play. Too bad mom doesn’t like asparagus and beef. Sigh… 😔
Our servers were a little shy today and I had trouble hearing what they had to say about the ingredients.
Lunch kicked off with a small amuse of what I thought was potato purée and cream cheese. This came with chunks of potatoes and crispy bacon hidden in the middle and toppings of thyme granita and fresh chives. A really nice and refreshing dish to stimulate our appetite.
Green asparagus, glazed bacon, tarragon sabayon – We didn’t drop a few more bucks for the white asparagus but we still ended up with these green ones, also from Loire Valley in France. And why not, this is asparagus season right?
Elegantly decorated asparagus glazed with bacon, was perfectly matched with a tarragon sabayon that came with a nice burst of acidity.
My hot and cold onion soup – My fifth or sixth time having this already but it remained a pretty good choice for my hot starter. The dish has a dominating onion flavor highlighted by the scoop of onion ice-cream which worked reasonably well with lukewarm onion soup. The piece of dough between the ice-cream and soup was a little chewy today. That was perhaps the only blemish.
Suzuki, shrimp, carrot – Japanese Suzuki pressed with delicate shrimp mousse was nicely topped by a layer of aromatic herbs. There was also a burst of sweetness from the variations of carrot and a hint of mint to round out the dish.
Chicken, gnocchi, mushroom – For meat course, both mom and I enjoyed the roasted chicken breast topped with thin slices of porcini mushroom. There was a second serving with the meat extracted from the chicken leg which was sandwiched with a thin layer of silky shrimp mousse (same mousse from the fish course?). The dish, topped by a homemade gnocchi and baby coriander, was finished off nicely with a quenelle of mushroom purée and chicken jus.
Caramel, hazelnut, chocolate – While mom went with the citrus cheesecake, I got myself a simple chocolate tart with light salted caramel ice-cream, roasted hazelnut and gold foil. There were different textures of dark and milk chocolate in there for some subtle difference in flavors.
Petite fours were chocolate with hazelnut and caramel, strawberry chocolate and passion fruit tart. I was so stuffed that I thought I would have trouble walking over to the MTR station. And that's where I was heading to meet up with Jelloman and little nugget as we were about to kick off our 3-day trip in Futian.
