A member of Relais Desserts International, Eric Baumann is a well known figure in the dessert world for his work as a chocolatier and patissier.
It's almost 5PM so I didn't expect they still have all of their pastries around.
I went with their old-fashioned mille feuille and this cake they called Schwedentörtchen (translates into "Sweden tart").
Now that everyone is asleep, I can finally enjoy my Schwedentörtchen with some bubbly. This is primarily vanilla mousse with a simple fondant job on top. Pretty decent.
