It didn't take long for me to become a fan of Chef François Delaire, Peninsula Hong Kong's Executive Pastry Chef when he joined the iconic 5-star hotel early last year. Since my last visit in 2019, I have been itching to come back for more but last year's social unrest followed by the latest novel coronavirus outbreak have really handcuffed me from going to Tsim Sha Tsui more often.
But this afternoon, I got a job to do in Harbour City trying to get my little nugget a present or two while he was stranded at home. That also gave me a chance to swing by Peninsula Boutique for some sweet treats.
The Coconut Caramel (right) has been around for a while but the Tea Pot (left) is a relatively new creation.
This looks absolutely gorgeous! Even my helper was impressed.
Tea Pot ($70) - Inspired by a traditional Chinese tea pot, this delightful, fully edible teapot pastry came with a white sesame seed madeleine base, layered with jasmine tea cream and osmanthus jelly.
Everything was coated in a rich chocolate velvet. Even the handle was edible as it was made with dark chocolate.
This was very light and delicate. The subtle tea flavors from the jasmine cream matched the sweetness of the osmanthus jelly perfectly. It's almost like having a cup of freshly-brewed Chinese tea. What an amazing dessert!
Coconut Caramel ($65) - A beautifully decorated tropical dessert featuring both coconut and pineapple.
An outer layer of white chocolate and coconut flakes conceals a delicate centre of velvety coconut mousse.
This was even lighter than the previous tea pot dessert. The texture was almost like a giant marshmallow. I love the way the mild flavored caramel cream worked with the airy vanilla sponge while the the coconut flakes and juicy roasted pineapple provided some additional textures and flavors to the dessert.
We all used to enjoy the artful desserts prepared by Chef Delaire's team at Gaddi's but now that the fine-dining French restaurant has temporarily closed (until May), Peninsula Boutique will be my last source for his incredible desserts. Needless to say, I will be back soon.
