Ginza Kagari 銀座篝拉麵 K11 Art Mall (Hong Kong, CHINA) ★★★★☆

I had an inspiring AI training session this morning that ran a little over time, so lunch was going to be later than usual. Rather than settling for a quick meal at a local cha chaan teng, I decided to head over to K11 Art Mall for a bowl of chicken paitan ramen (鶏白湯拉麵).

Ginza Kagari (銀座篝拉麵) is known for its rich, chicken-based broth, available in a variety of sophisticated flavor profiles, including truffle, soy sauce, truffled soy, and even a matcha-infused version. They’ve recently added a new curry-infused paitan ramen to the menu, but since I have a few more meetings where I'll be presenting, I figured I should preserve my voice and opted for something lighter.


I went with the same chicken paitan ramen as my last visit. What stood out immediately was the vibrancy of the seasonal vegetables. The bowl featured fresh, colorful ingredients like roasted pumpkin, a crispy purple potato chip, and a juicy tomato each adding a welcome contrast in texture and color.


The broth was luscious and deeply savory, with a creamy mouthfeel that clung beautifully to the noodles. That said, I did find it slightly on the greasy side, which might not be suited for everyone's palate.


The noodles held up well and were clinging to the broth beautifully.


The soft-boiled egg, which was slightly overcooked last time, was much improved today — well-executed with a velvety yolk.


Apart from the noodles and vegetables, the bowl also featured a tender, moist chicken fillet that was extremely succulent and flavorful. Easily one of the highlights of the dish.



It’s been a while since I last had ramen, probably not since I got back from Fukuoka over Christmas so it felt great to finally have one again.
