Mad About Sucre (Singapore, SINGAPORE) ★★★★☆

After spending the majority of the day at the Singapore Zoo, I took off on my own to Outram Park to check out a couple of dessert spots near Chinatown. The first one I pulled trigger on was Mad About Sucre, a French patisserie, haute chocolaterie and gourmet restaurant all under the same roof.

Baker-owner Lena Chan, a Le Cordon Bleu alum, is very passionate about her artisanal handcrafted cakes (so is her team!). Dessert and healthy normally don't go hand in hand but Mad About Sucre does their best to ensure that we are having desserts in a "healthy" manner. They are all into using natural ingredients, reduced sweetness and organic flour with no artificial flavoring, color and preservative.

This is a very cozy dessert café and just by looking at the display counter, I knew they mean business because all these handcrafted desserts look like they have just come out of some fine dining French restaurants like Joël Robuchon.

All their decadent desserts come with tea pairing which is already covered by the price tag. I took a look at some of their amazing creations before deciding on their Apple dessert (SGD$23.8), an apple shaped cake with apple compote, almond cream and light chocolate.

Unlike the other desserts here, this one was made to order but it only took a mere 10 minutes to arrive. On a hot summer day like this, a cold dessert like this was perfect.

This was soft like ice-cream but there were different textures and flavors in there including chunky French apple cubes poached with Portuguese port wine and silky almond mousse, finishing with an apple purée glaze on the outside.

It was so tasty. I love the different temperature (and texture) between the ingredients. And the balance of sweetness (chocolate and almond cream) and acidity (apple) was perfect.
