Kinboshi's brand of pasta is not the authentic Italian type but more of a Japanese-Italian hybrid. One can check out their most popular pasta dishes from the monthly ranking they put on the wall just outside the restaurant.
They have around 40 different pasta dishes on their menu and their chefs did a wonderful job mixing both Japanese and Italian ingredients into their creations (Their prosciutto and porcini mushrooms both came from Italy).
Obviously one of the fan favorites here based on the current ranking. The spaghetti was tossed in a creamy soy sauce with smoked duck breast, spinach and soft-boiled egg.
So often we associated soupy with soggy, badly overcooked pasta but that's not the case here at all. The spaghetti was still strong to the bite and it was complemented by this nice smoky flavor from the creamy soup.
This was the least soupy one we had. The homemade spaghetti was cooked in what they called their standard oil sauce (pepperoncino and garlic) and served with assorted mushrooms, cabbage and fresh leeks. The salted cod roes provided the noodles with some extra kick.
Mom had the spaghetti tossed in creamy tomato sauce, with grilled chicken, tomatoes and spinach. Not bad and I particularly liked the fresh tomatoes.
