Sweet Fashion House is the newest (and hottest) member to the city's dessert scene focusing on premium pastries and chocolate. They have opened a number of stores including pop-ups at K11 and Shatin but the one I decided to visit was their Ritz Carlton location, where they effectively took over the spot formerly occupied by Pierre Hermé.
This is a very impressive collection of pastries curated by their talented team, highlighted by the signature Bajiao (second to right) and cherry-shaped Hanami (right).
They've got some macarons too, but I think I still prefer getting my macaron fix at Pierre Hermé.
Black Diamond ($58) - A real gem with a mix of black tea sponge, blackberry gel, blackberries and blueberries cream, and coconut mousse.
This is a very elegant dessert showing off a great balance of sweetness (black tea sponge) and acidity (blackberries).
The texture was really nice too. Love the way the black tea sponge and blackberries cream come together while the coconut mousse added some sharp, sweet and comforting flavors to the earthy (black tea) and fruity (blueberry and blackberry) taste.
The Black Truffle ($68) - The black truffle ball was a combination of black truffle from Périgord France, Tongmuguan smoked Bohea black tea and Manjari 64% chocolate.
I thought the winter black truffle provided some seductive flavors to the pillowy cocoa sponge cake, rich chocolate mousse and chocolate ganache. It's the perfect treat for any chocolate and black truffle lover but for me, perhaps a little too strong and powerful.
