After having so many tonkotsu (pork based) ramen the last couple of times in Tokyo, I thought I would much prefer something different on this trip. Ramen Takahashi's yakiago (grilled flying fish) stock was a really nice start for me last night in Shinjuku and I was hoping that 鶏そば 三歩一's chicken based broth would be nearly as good tonight.
三歩一 (means "three step one")'s famous chicken stock is made with chickens from the Iwate Prefecture and is widely considered as one of the best in Tokyo by the locals with its full bodied stock being one of the most collagen-rich one in the business.
For any ramen shops to be successful, I thought having their own noodles freshly made in house is a must. And that's why they have this noodle making area at the back of the shop.
I went with their "original" chicken broth (730yen) which was really light but there's the right amount of sweetness and flavors in there. It came with the usual suspects of bamboo shoots, marinated egg and green onion. Oh and I love those poached chicken fillets. They were really soft and tender.
To complement their relatively light stock, the chef deliberately made the noodles a little harder than usual to give it more punch. There're also yuzu peppers available there in case anyone wants an extra kick.
I will definitely try their "super rich" chicken broth next time around.
