b. patisserie (Seoul, SOUTH KOREA) ★★★★☆

San Francisco's best bakeries continue to land in the epic food scene of Seoul. Following the footsteps of Mr. Holmes bakehouse (now defunct) and Tartine Bakery, b. patisserie made their long anticipated debut with much fanfare late last year.



b. patisserie burst onto the bread and sweets scene of San Francisco back in 2013 behind pastry superstars Belinda Leong and Michel Suas. Their California Street flagship has since expanded next door and is now getting into the Japanese mochi business.



2018 has been a banner year for co-owners Belinda Leong and Michel Suas. Not only did the duo roll out their first branch of b. patisserie in Garosu-gil, they were winners of the coveted James Beard Award for Outstanding Baker in 2018.



The multi-story b. patisserie in Seoul started diners off with a sleek space on the ground floor showcasing all their patented bread and baked goods (Kouign Amann!)



There is a small dine-in area for those who want a quick bite with a sip of coffee.



In case you are wondering about their pastry selection, here's my two cents - don't waste your time there.



Kouign Amann Classic (4,500 won) - Kouign Amann is a Breton cake made of bread dough with multi-layers of butter and sugar. Not surprisingly, it was once described as "the fattiest pastry in all of Europe" by the New York Times. When done right, it is really light and flaky with soft, buttery layers not unlikely a croissant, but with more of a caramelized exterior. 

Belinda Leong has perfected her kouign amann recipe through years of dedication. This is super flaky with a lovely sugary and caramelized exterior. I'm sure I'm not the first to say this but it's very addictive (they should have made this bigger lol!).



Kouign Amann Black Sesame (5,000 won) - This was brought back to our hotel for breakfast the next morning. While it had the same flaky texture as the classic kouign amann, it came with extra flavors from the black sesame. Not only was it dusted with black sesame, I think the bread dough was also slightly flavored with it.



Very tasty and I don't think we can stop eating these.



Chocolate Banana Almond Croissant (4,500 won) - Of course, we had to check out their croissants too to see how they stack up against other competitions. We had the chocolate banana almond croissant and it was beautiful. Flaky and buttery like most almond croissant, it's been added an extra dimension of crunchiness (like our Hong Kong style pineapple buns). It was matched perfectly by the creamy banana with its melt-in-your-mouth texture.



We wish we could stick around a little longer but our Korean barbecue dinner was coming up shortly.
