For weeks, I have been telling my ramen-loving son that Ginza Kagari (銀座篝拉麵), tori paitan ramen (雞白湯拉麵) specialist will be opening for the first time in Hong Kong. I didn't realize he had been paying attention all along until he told me this afternoon that he wanted to have a slurp of this newly arrived tori paitan ramen from Tokyo.
On a scale of 5, Ginza Kagari scores 3.66 on Tabelog which would put them at around 426th best in Tokyo.
After a 15-minute walk, we were finally seated. While the chefs were busy preparing our ramen noodles, our server brought over some dried scallions and ginger as condiments.
Chicken paitan ramen ($98) – Their special chicken broth is available in several variations, including ones infused with truffle, soy sauce, truffled soy and matcha. However, during my first visit to a ramen shop, I will usually go with the most basic version. This would allow me to truly appreciate the fundamental flavors and craftsmanship of the ramen.
The first thing I noticed about this bowl of ramen was the vibrant vegetables. The pumpkin, purple potato (chip) and tomato were all fresh and juicy. The creamy broth had a deep and savory richness but for me, slightly greasy. I like the way it was clinging to the noodles.
The soft-boiled egg was slightly overcooked.
Apart from the seasonal vegetables, the only other ingredient (not counting the noodles) was the chicken fillet, and they were really really tender and succulent.
I thought this was right around my expectation. It gives us another great option for chicken paitan ramen in town.
