Ramen Kindenmaru Shibuya Honten (金伝丸 渋谷本店) is a highly popular, casual ramen shop in the heart of Shibuya. It is lauded by locals as a very reliable, cult-favorite late-night spot. Its signature style is actually a Tonkotsu-Shoyu called Tokumaru (特丸) — a blend of rich pork bone broth and savory soy sauce, rather than a pure, traditional white Hakata-style tonkotsu.
This is my last meal before heading to the airport. The rich, creamy tonkotsu broth infused with soy sauce sounded really appealing, but I decided to go a different route.
Misomaru (味噌丸) — I’m a fan of strong, punchy flavors, so I figured it would be right up my alley.
But I was wrong on this one. It turned out to be a heavy, comforting take on a classic Japanese favorite. Essentially a rich miso-tonkotsu hybrid rather than a light, traditional miso soup, the flavor profile was just a bit too much for me.
It’s always nice to be back in Tokyo, but there’s never quite enough time to do everything according to plan. I guess there’ll always be a next time.
