The owner-chef, who happens to be an engineer-turned-patissier, spent time both in France and Japan to hone his skills and he did a good job making all these pastries look good. During my very brief visit, I managed to sample 3 different pastries and here's what I thought about them.
Victoria - Hazelnut mousse, pineapple cream, caramelized pineapple and sponge cake. A nice combination of refreshing flavors but everything was too much on the light side. Something with a little more texture or acidity would have helped a lot.
Royal Earl Grey - 42% milk chocolate mousse, earl grey cremeux, dacquoise, feuilletine. Again, everything including the milk chocolate and early grey came in a little short. I personally love my cakes to be a lot richer and flavorful so despite the nice texture, it didn't check all the boxes for me here.
Pistache Framboise - Sicilian pistachio mousse, raspberry cream, caramelized almond. This was the only one that managed to make an impression on us. Really enjoyed the pistachio mousse for its smooth texture and wonderful flavor while the caramelized almond provided some extra bite.
