Bari-Uma Ramen 霸嗎拉麵 (Hong Kong, CHINA) ★★★★☆

As the largest ramen chain in Hiroshima, Bari-Uma Ramen (霸嗎拉麵) burst onto Hong Kong's dining scene back in 2015 with its first shop in Causeway Bay. Since then, it has expanded to Tsim Sha Tsui, Central, TKO, Tuen Mun and even Macau.



Bari-Uma is best known for having one of the richest Tonkotsu broth in the business thanks to the premier pork bones, chicken and vegetables they used to prepare their signature soup base.



Look at this sizzling hot and comforting tonkotsu broth! Looking good with the thick slab of pork belly floating on top.



I think this is by far the best tonkotsu broth I've tasted in Hong Kong. Yes, the sample size is relatively small but it's unquestionably the richest and came with a nice spicy kick too.



I was still a little bit hungry after the ramen so some fried gyoza to finish off my lunch.



I love a ramen shop that prepares its own noodle in-house. Generally, it's a very good sign that they have freshly made noodles prepared daily.



Ramen eating is a really personal thing so do take this review with a grain of salt. But if you love rich flavored tonkotsu broth, you probably can't go wrong with Bari-Uma.
