Thomas Trillion (Hong Kong, CHINA) ★★★★★

Friends around me love to sing their praises of local pâtissier Tony Wong but for me, Thomas Lui has always been my man. Pastry Chef Thomas Lui, owner of Thomas Trillion and former executive pastry chef of JW Marriott, is an artisan in cakes and pastries. At Thomas Trillion, he brings his passion and love to the game and prepare all the different artisanal creations for the eyes of dessert lovers only.



Thomas has represented Hong Kong at the highest level and has won numerous awards overseas as shown by these medals on the wall.



This is my first visit to their Kowloon City store since they moved here (from North Point) a couple of months ago.



I got these 3 cakes to share among the four of us tonight.



Mango Tango ($60) - Dressed like a miniature gift box, this is actually a mango sablée based cake layered with passion fruit mango cremeux, pistachio sponge and fruit compotes. The texture was very firm and moist while the taste was refreshing. Very nice.  




Passion fruit orange or Cherryoyo ($60) - Silky smooth light chocolate mousse infused with passion fruit and orange coulis and ganache and a streusel base rounded things out. It was sublime! Love the way the passion fruit and orange flavored coulis and ganache oozed out like molten lava. Very addictive (my first star out of the three).



Royal ($60) - Chocolate sponge with layers of mango compote, cocoa gelee and creamy caramel mousse. Love the contrasting flavors and textures from the different ingredients. Again silky smooth and very exciting for the palates.




Obviously, I was overjoyed tonight since I haven't eaten Chef Thomas' cakes for a while. But now that his store has moved a little closer to where I usually hang out, it's safe to say that I will be back very soon.
